Oolong Tea Master

The not-so-expert inspects the rolled tea leaves for perfection (before handing back to Zhou and Mr Wei!)

The rolling process is a key part of tea-making.

It is especially important to produce Oolong. The leaves are placed into the rolling machine and turned by hand. The act of colliding with each other causes the leaves to bruise and begin gently oxidising

The leaves are repeatedly rolled until the Tea Master is satisfied.
